My grandmother has always been one of the most important people in my life. She was one of those people that you just knew loved every bit of you the way you were and would love you forever. She had a voracious love of reading that she passed down and was the one who got me interested in dragons as a child. She also loved fancy perfume (which she kept on a golden, mirrored tray), sewing and chocolate turtles. You know, chocolate turtles. The treat that consists of a little pile of pecans, chocolate and caramel. I especially remember stocking up on them every holiday season and to this day chocolate turtles remind me of her. She is no longer with us, but these cookies are some that I created in honor of her. She would have loved them!

I was super excited when I discovered Kraft Caramel Bits and instantly knew that I had to make these cookies with them! What are Caramel Bits you ask? They are little, unwrapped caramel balls and can be found near the chocolate chips at standard grocery stores. Sure, you can simply chop up your favorite caramel to use for this recipe, but the Caramel Bits are super convenient and melt perfectly for these cookies so I’d definitely recommend giving them a try. They keep some of their shape when baked and become extra soft and chewy, but aren’t gooey. (Unless you are eating the cookies warm right out of the oven of course! ). Seriously, perfection!

If you are a chocolate turtle fan, or if you just love chocolate, caramel and pecans (which means you are likely a turtle fan too….) then these cookies are a MUST to try! I could not stop eating them and already look forward to baking them again.
TIPS:
- Sometimes I get picky about brands. It’s true. My favorite brand of shortening for these cookies is Crisco and my favorite brand of semisweet chocolate chips is Nestle and my favorite brand of caramel for these is Kraft Caramel Bits. This isn’t sponsored by them in any way or form, they are just my favorite.
- Important: When you pull your cookies out of the oven they may look under-baked and they will have domed tops and appear airy. This is perfect! As you give them 2-4 minutes to finish baking on the baking sheet and as they start to cool the domes will deflate into beautiful, smooth lumps and the cookies will firm up. It’s quite magical. ( In fact, if you try and move them before they cool they will likely fall apart.)
- If your cookies come out too flat some common mistakes could be that: the dough was over-mixed, the ingredients were too warm or they were over-baked.
- If your cookies come out too thick/didn’t spread properly some common mistakes could be that: the ingredients were too cold (shortening should be room temperature), the dough balls were packed too tightly, the baking soda was old, or the flour was packed into the measuring cup instead of lightly scooped.
