There is just something about Dr. Seuss that is widely captivating and universally appealing, which yes, are basically the same thing. But it’s true! Actually, maybe it’s more than just one something because I can think of dozens of reasons why I love Dr. Seuss books. The read-aloud-grade rhyming, delicious made-up words, fantastic imaginary creatures, vivid colors, relatable tales and purely nonsensical genius-ness. Yes, we are most definitely fans. If my three year-old were to pick a favorite author I am quite certain he would pick Dr. Seuss based purely off of how many of his books that he loves and how often he requests them at bedtime.
As a result, my husband and I have learned a lot of Seuss’ books and one of our all-time favorites to read with him is “Oh, the Thinks you can Think!”. The message is lovely and the writing phenomenal. However, weird as it may sound, we have a favorite phrase as a family when we read this book aloud and that phrase is “Sclopp. Schlopp. Beautiful schlopp. Beautiful schlopp with a cherry on top.” It is just so fun to say! Seriously give it a try right now and read it out loud, I promise not to judge. Amazing right?!
Because of this deep love we already harbored for this make believe dessert, it stood out to me as the obvious choice when I considered doing a Dr. Suess “beyond the book” recipe for Dr. Seuss day. I mean, c’mon, it has to taste as great as it sounds right? That is when this recipe was born. It is three ingredients (if your pudding is pre-made and four if you count the cherries), positively delicious and perfectly schlopp-y. I hope it brings you as much joy as it does us. As a side note, it makes a wonderful “schlepp parfait” if you layer it in a stem glass with fruit and some whipped cream on top. *mind blown*
