Ingredients
- 1/2 tablespoon olive oil
- 3 cloves garlic, minced
- 1 medium onion, diced
- 1 head cauliflower, diced
- 14 ounces vegetable broth
- 14 ounces chicken broth
- 1/4 teaspoon ground thyme
- 1/4 teaspoon celery salt
- salt to taste
- grated parmesan, for serving
- sliced green onion, for serving
Instructions
- In a large dutch oven pot, heat olive oil over medium heat. Add chopped onion and garlic until soft. (About 4-5 minutes)
- Stir in cauliflower, vegetable broth, chicken broth, ground thyme, and celery salt. Bring to a boil then simmer for 15-20 minutes until soft.
- Pour all contents into a blender or food processor and blend until smooth and creamy.
- Add salt and fresh grated parmesan to taste and top with green onions if desired.
